What did you do before starting your Sushi Izu franchise?
Take away sushi and Chinese food.

What is the best aspect of operating your own Sushi Izu franchise?
Food safety; high foot traffic; low risk; and low advertising spend.

What kind of training and support did you receive?
I’ve received training in customer service, new menu items and food safety.

What is your favourite menu item to make?
‘Akane’ sushi combination, Teriyaki Chicken Dragon Roll and our Salmon Shoreline Combo.

Please share a memorable experience you’ve had during your time as a Sushi Izu franchisee.
Many of our customers are tourists in Cairns. One day a customer told me he’s on holiday and today was his last day after spending three nights in Cairns. He told me he bought sushi from us every night. Night one, medium roll. Night two, Salmon Shoreline Combo. Night three, ‘Suisen’ sushi combination. He said ‘it was the best sushi he has ever eaten, and if he could stay longer he would eat more’. ‘Very to sad to leave’ and left with a Poke Bowl.

I also had one day when the Woolworths Store Manager at Cairns came over to our sushi bar and said, ‘Thank you!’. He further explained, ‘many customers have told me our store is the best because of its sushi offer.’ That made me very proud.

When did you open or become a Sushi Izu franchisee?

Why did you choose a Sushi Izu franchise over another franchise?
I worked at AFC for 5 years as Head Trainer before becoming a franchisee. I was very confident in being successful as I understood every aspect of our sushi bar operation given my previous experience.

What are the benefits of owning a franchise over a standalone sushi business?
Quite simple, loads of foot traffic and it’s a simple operation. Most ingredients are ready to eat. All payments are handled by Woolworths at their registers. I therefore save on labour. AFC handles all supplier invoices, which is convenient for any small business owner, and further protects our entire franchise network.

What did you do before starting your Sushi Izu franchise?
Head Trainer at AFC.

What is the best aspect of operating your own Sushi Izu franchise?
Of course, making a profit! Also, learning new food trends from the US and across Australia.

What kind of training and support did you receive?
This is a hard question since I was AFC’s Head Trainer. However, we received two weeks initial training from AFC with a keen focus on business mentality. Despite being chefs, we’re retailers too – we must hit the floor and sell, sell, sell!

What is your favourite menu item to make?
Grilled items and crunchy roll. I also like our various sushi combinations named after Japanese flowers. I believe these combos are what separates us from our competitors.

Please share a memorable experience you’ve had during your time as a Sushi Izu franchisee.
It was opening day! It was my first-time in business, so naturally I was a bit nervous. The AFC team provided huge support for 5 days and assisted with strong customer engagement – all for me. How beautiful! I could see the AFC team truly wanted my business to succeed. Thank you!

Why did you choose a Sushi Izu franchise over another franchise?
I am very fortunate to have been working at AFC and was naturally interested in becoming a franchisee. It was the best decision of my life to open my first sushi bar at Vermont.

What are the benefits of owning a franchise over a standalone sushi business?
Despite how hard you work, a standalone sushi bar is likely to fail if customers do not visit. By comparison, the foot traffic in a supermarket allows you the opportunity to increase customer awareness. You must be organised and willing to engage customers. I can speak with confidence that foot traffic is a key strength of this business.

What did you do before starting your Sushi Izu franchise?
I worked as a kitchen hand at a Japanese restaurant.

What is the best aspect of operating your own Sushi Izu franchise?
The profit I earn is determined by how I operate. I will succeed if I make the most of every sale opportunity. This is because all Woolworths customers should be regular sushi customers.

What kind of training and support did you receive?
When sales dropped compared to last year, I was impressed at the support that the AFC Head Office provided me. Our Area Manager visits regularly to identify missed opportunities – refills dumplings, makes a Hoso Roll and cares for customers, even assists with food preparation if I’m behind. I feel so good that AFC is willing to lend a hand when I need it.

What is your favourite menu item to make?
I like making our range of Hybrid Sushi, especially our Rainbow Roll. It looks beautiful and makes me happy. I also like making medium rolls, the rice looks like a donut and makes feel better when done right.

Please share a memorable experience you’ve had during your time as a Sushi Izu franchisee.
I’ll never forget one customer. When I first worked at our Box Hill location, there was one customer who always ordered the same product. It was our Spicy Tuna and Cucumber Roll. She always asked me to add additional Spicy Sauce and Jalapeno.

When the location at Box Hill closed, I met her again at Eastland. She was so pleased to see me and ordered the same. Since first becoming a franchisee at Vermont and now Eastland, customers greet me with pleasure every day. It makes being a franchisee worthwhile!
